Strawberry Rose Matcha Coconut Spritz
There are recipes that are planned, and then there are recipes that happen by happy accident.
I recently attended the Foodpreneurs Festival, where I had the pleasure of meeting one of the founders behind Pyewacket's Traditional Shrubs. Their beautiful branding immediately caught my eye, but it was the strawberry rose shrub that truly intrigued me. The combination sounded like it had been made for matcha.
Once I got home, I couldn't wait to experiment.

What is a Shrub?
A shrub is a traditional drinking vinegar made by combining fruit, vinegar, and often a touch of sweetener. Dating back centuries, shrubs were originally used as a way to preserve seasonal fruit before refrigeration existed.
Today, they're loved for their complex flavor profile—balancing sweetness, acidity, and fruit in a way that adds depth and brightness to drinks.
Many people also enjoy shrubs because they contain vinegar, which may support digestion and help moderate blood sugar response when consumed as part of a balanced diet. Shrubs can also be a wonderful alcohol-free alternative for creating sophisticated beverages with a little extra character.
Why Matcha and Coconut Water?
Ceremonial matcha is naturally rich in antioxidants, particularly catechins such as EGCG. It also contains L-theanine, an amino acid known for promoting a calm, focused energy.
Coconut water contributes natural electrolytes, including potassium, making it a refreshing base for warm-weather drinks.
Combined with the vibrant fruit and floral notes of strawberry rose shrub, this drink feels equal parts wellness ritual and summer treat.
Strawberry Rose Matcha Coconut Spritz
Ingredients
2.5g OHAYŌ Certified Organic Ceremonial Matcha
5 tablespoons Pyewacket's Traditional Strawberry Rose Shrub
250–300ml Coco Coast Coconut Water
Ice
Fresh strawberry to garnish (optional)
Method
Add the strawberry rose shrub to the bottom of a glass.
Fill the glass with ice.
Pour over the coconut water.
In a separate bowl, whisk 2.5g of OHAYŌ Matcha with approximately 60 ml of cool water until smooth and frothy.
Slowly pour the matcha over the back of a spoon to create a beautiful layered effect.
Garnish with a fresh strawberry and enjoy immediately.
Notes
For a sparkling version, replace half of the coconut water with sparkling water.
