Earl Grey Matcha Oat Cookies

Makes 12 · 20 mins · No mixer needed

Ingredients:

2 tsp (4g) Organic Ceremonial Matcha with Earl Grey
1½ cups rolled oats
½ cup almond meal
¼ cup coconut sugar (or raw sugar)
¼ tsp sea salt
¼ cup coconut oil, melted
3 tbsp pure maple syrup
1 egg
1 tsp vanilla extract
½ cup dark chocolate chips (70%+, optional but recommended)

Method:

Preheat your oven to 170°C and line a baking tray with baking paper.

Mix the oats, almond meal, coconut sugar, matcha, and salt together in a large bowl.

In a separate bowl, whisk together the coconut oil, maple syrup, egg, and vanilla.

Pour the wet ingredients into the dry and stir until combined. Fold in chocolate chips if using.

Roll into 12 balls and place on the tray, pressing down gently to flatten slightly.

Bake for 12–14 minutes until golden at the edges. They'll firm up as they cool—resist the urge to overbake!

Leave to cool on the tray for 5 minutes, then transfer to a wire rack.
